All you need are four ingredients that are easily available at your local grocer for these easy cake mix cookies.

  • Lemon Cake Mix – Use your favorite brand of box cake mix, I used Betty Crocker.
  • Vegetable Oil
  • Large Egg
  • Confectioners’ Sugar – Also known as powdered sugar.

Tips and Suggestions

  • Add more lemon flavor by adding a lemon glaze. Make a quick glaze with a cup of confectioners’ sugar and enough fresh lemon juice for drizzling consistency. Drizzle over cooled cookies.
  • Use either parchment paper or a silicone mat on your cookie sheets to keep the cookies from sticking.
  • For best results use a cookie scoop for evenly sized cookies that bake consistently.

How do you store cake mix lemon crinkle cookies?

Store cookies in an airtight container for up to 5 days. They can stay on the counter, no need to refrigerate them. They can be frozen for up to 2 months but the powdered sugar coating might disappear. You can dust the tops again once they thaw.

As an alternative, you can freeze the balls of dough before rolling them in powdered sugar. This is my preferred method of freezing rather than freezing baked cookies. Thaw the cookie dough balls then roll in the powdered sugar and bake according to the directions.

Ingredients

  • 1 box Lemon Cake Mix, 15.25 oz. size
  • โ…“ cup Vegetable Oil
  • 2 large Eggs
  • ยผ cup Powdered Sugar

Instructions

  • Line baking sheets with parchment paper or silicone baking mats and set aside. Preheat oven to 350โ„‰.
  • Using an electric mixer, combine the lemon cake mix, vegetable oil, and eggs until thoroughly combined.
    1 box Lemon Cake Mix, 15.25 oz. size, โ…“ cup Vegetable Oil, 2 large Eggs
  • Using a cookie scoop, scoop out the dough, roll in powdered sugar, and place 2-inches apart on a prepared baking sheet.
    ยผ cup Powdered Sugar
  • Bake for 10 to 12 minutes until the cookies are set. Remove the baking sheet from the oven and allow the cookies to cool on the sheet for 5 minutes before removing to a cooling rack to cool completely.
  • Store in an airtight container.
