Line baking sheets with parchment paper or silicone baking mats and set aside. Preheat oven to 350℉.
Using an electric mixer, combine the lemon cake mix, vegetable oil, and eggs until thoroughly combined.
1 box Lemon Cake Mix, 15.25 oz. size, ⅓ cup Vegetable Oil, 2 large Eggs
Using a cookie scoop, scoop out the dough, roll in powdered sugar, and place 2-inches apart on a prepared baking sheet.
¼ cup Powdered Sugar
Bake for 10 to 12 minutes until the cookies are set. Remove the baking sheet from the oven and allow the cookies to cool on the sheet for 5 minutes before removing to a cooling rack to cool completely.
Store in an airtight container.
