I enjoy making infused oils. The first one I ever made was guajillo chili pepper olive oil. I made a lot of it for gifts and it was very well received. So I decided to try a few more, starting with rosemary olive oil. This is a great way to use an abundance of rosemary from your garden.

How do you store rosemary infused olive oil?
If there is no decorative rosemary in the glass bottle, you can store it in a cool room temperature, dark place for about 4 months. If the oil changes in color, gets cloudy, smells rancid, or changes consistency, do not use it. If you have fresh rosemary in the oil, use it up within 5 to 7 days.

Ingredients
- 2 cups extra virgin olive oil
- 1 ounce fresh rosemary sprigs
Instructions
- Wash and thoroughly dry the rosemary sprigs. Make sure rosemary is completely dry.1 ounce fresh rosemary sprigs
- Take the leaves off of the stems and place them in a saucepan. Add the olive oil and turn on the heat to medium-low. Bring to a simmer, do not boil. Allow to simmer for 10 to 15 minutes until the oil is fragrant.2 cups extra virgin olive oil
- Remove from the heat and allow to cool completely before straining the oil into a glass jar or bottles.
