How to Make Cinnamon Sugar
The key to truly great cinnamon sugar is using high-quality ground cinnamon. I like Vietnamese Cinnamon. When you use good cinnamon, you don’t need as much. A typical ratio for making cinnamon sugar is 1/4 cup of white sugar and 1 tablespoon of cinnamon.
For our tastes, that ratio doesn’t work. Our perfect cinnamon sugar ratio less cinnamon and more sugar, as indicated in the recipe below.

How to Use Cinnamon Sugar
Sprinkle cinnamon sugar on toast with butter (my childhood favorite), bagels, waffles, or French toast. Recipes that use cinnamon sugar include snickerdoodles, mini cinnamon sugar muffins, and churros.
You can also rim a cocktail glass, stir some into coffee, hot chocolate, or tea, and use some as a topping for muffins and oatmeal.

You can, but it will be very fine and more suited for dusting desserts.
Can I make cinnamon sugar with brown sugar?
Yes. Brown sugar adds moisture and a deeper molasses flavor. Yoy may get clumps more easily, though.
