  • Soy Sauce – I use regular soy sauce but low sodium soy sauce is also an option.
  • Chopped Fresh Garlic – in a pinch you can use the jarred variety.
  • Red Bell Pepper – Use an orange or yellow pepper if red isn’t available.
  • Instant Brown Rice – You can use white rice if you prefer.
  • Frozen Green Peas – Easy and convenient.
  • Green Onions – Also known as spring onions.
  • Butter – Either salted or unsalted butter works. Use what you have on hand.

There is no special equipment necessary to make this no egg fried rice, which is classic Chinese cooking. It’s also great for a busy night because the cooking process is easy.

  • Frying Pan – Non-stick is the best!
  • Wooden Spoon – Or a spatula or tongs to toss the veggies as they sautรฉ.
  • Measuring Spoons and Cups – Dry measure, not wet measure.
  • Cutting Board – Wood or plastic, whatever you prefer to use.
  • Knife – A chef’s knife is the best for chopping green onions and pepper.

Some fried rice recipes call for day-old rice. The reason for this is it’s firmer than freshly cooked rice. Since this recipe uses brown rice it holds up better.

You can certainly change up the recipe and use your favorite rice ad-ins. I like to mix it up by including sauteed sesame seeds, red onions, chopped water chestnuts, other colors of bell peppers, diced carrots, or other fresh veggies. If you need a shortcut, use a mixture of frozen veggies instead of fresh vegetables.

You could also grate in some fresh ginger to elevate the flavor.

Ingredients

  • 1 ยพ cups chicken broth
  • 3 tablespoons soy sauce
  • 1 teaspoon chopped garlic
  • 1 medium red bell pepper
  • 2 cups instant brown rice
  • 1 cup frozen green peas
  • ยผ cup sliced green onions
  • 1 tablespoon butter

Instructions

  • In a medium saute pan saute red pepper in butter until soft. Remove from pan and set aside.
  • In a large saute pan combine broth, soy sauce, and garlic. Bring to a boil on high. Stir in rice and return to a boil. Reduce heat to low, cover, and cook for 5 minutes.
  • Remove from heat and stir in peas, green onions, and red peppers. Cover and let stand for 5-7 minutes or until broth is absorbed. Fluff with a fork and serve.
