- 1 ¾ cups chicken broth
- 3 tablespoons soy sauce
- 1 teaspoon chopped garlic
- 1 medium red bell pepper
- 2 cups instant brown rice
- 1 cup frozen green peas
- ¼ cup sliced green onions
- 1 tablespoon butter
In a medium saute pan saute red pepper in butter until soft. Remove from pan and set aside.
In a large saute pan combine broth, soy sauce, and garlic. Bring to a boil on high. Stir in rice and return to a boil. Reduce heat to low, cover, and cook for 5 minutes.
Remove from heat and stir in peas, green onions, and red peppers. Cover and let stand for 5-7 minutes or until broth is absorbed. Fluff with a fork and serve.
