Ingredients for Mint Chocolate Cookies

  • Large Eggs
  • Pure Vanilla Extract
  • All Purpose Flour
  • Cocoa Powder

How do you make holiday mint M&M cookies?

  • Line your cookie sheet with a silicone baking mat or parchment paper.
  • Combine the dry ingredients, the flour, cocoa powder, baking soda, and salt, in a medium bowl.
  • Using an electric mixer, cream the butter and sugars in a large bowl. Use either a stand mixer or a hand mixer.
  • Add the wet ingredients, the eggs and vanilla, to the butter mixture and mix until combined.
  • Gently mix the flour into the butter mixture, on low speed.
  • Using a cookie scoop, make dough balls and place them on the prepared cookie sheet.
  • Before baking, gently press three or four mint M&Ms onto the tops of the cookies. While you can mix them into the cookie dough, the cookies won’t look as pretty. They will still taste amazing. If you prefer you can gently flatten the cookie dough ball before adding the candies. This is something I did not do.
  • Bake until chocolate mint M&M cookies are set, about 9 minutes. Remove the cookies from the oven and cool on the baking sheet for 5 minutes before moving them to a cooling rack to cool completely.

Why did the M&Ms in my cookies crack?

Whenever I make any type of M&M cookie recipe, the candies always crack. These chocolate mint M&M cookies are no exception. It’s normal and happens as the candies cool. Take a look at my M&M Christmas cookies and you’ll see the cracked candies. It also happened in my chocolate M&M cookies too. It’s nothing to worry about with these delicious cookies.

How long will mint chocolate cookies stay fresh?

I tried a couple of different things to see how these chocolate mint M&M cookies would hold up.

First I stored some in an airtight container on my counter. With my kids away at college I was able to keep them for 3 to 4 days. If they had been home, they probably would have been devoured more quickly. If they begin to stick together layer some parchment between the cookies. Make sure they are completely cool before storing.

Second, I wrapped the cookies individually in plastic wrap and then put them in a freezer-safe bag and stored them in the freezer. They will be fine for 2 to 3 months. Bring them to room temperature on the counter before eating.

By wrapping them individually you can thaw just what you need.

Do these chocolate mint M&M cookies ship well?

I shipped these cookies to my college kids and tried packing them a couple of different ways. Placing them flat side to flat side and wrapping them well in plastic wrap.

Then I packed them in a plastic Ziploc bag, squeezing out all of the air, and put them into a box for shipping with packing materials. They arrived in great condition and stayed fresh, wrapped in twos for a few days after they arrived.

Ingredients

  • 1 cup unsalted butter, room temperature
  • ¾ cup sugar
  • â…” cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 2¼ cups flour
  • â…” cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 bag Mint M&M candies

Instructions

  • Preheat oven to 350℉. Line baking sheets with parchment paper or a silicone baking mat.
  • In a medium bowl combine the flour, cocoa powder, baking soda, and salt. Whisk to mix and set aside.
    2¼ cups flour, ⅔ cup unsweetened cocoa powder, 1 teaspoon baking soda, ¼ teaspoon salt
  • In the bowl of a stand mixer, cream the butter, sugar, and brown sugar until well incorporated.
    1 cup unsalted butter, room temperature, ¾ cup sugar, ⅔ cup packed brown sugar
  • Mix in the eggs and vanilla extract.
    2 large eggs, 1 teaspoon pure vanilla extract
  • Gently mix in the dry ingredients until incorporated. Using a cookie scoop, roll the dough into balls and place two-inches apart on prepared cookie sheets.
  • Gently press a few mint M&M's into each cookie ball. You may not use all of the candies.
    1 bag Mint M&M candies
  • Bake in a 350℉ oven for 9 to 11 minutes or until edges are set.
  • Remove from the oven and cool on the baking sheet for 5 minutes. Then remove to a cooling rack to cool completely. Store in an airtight container once cooled.
