There’s no shame in making semi-homemade Christmas cookies. Time is at a premium during the holidays, and easy recipes that start with a mix are a welcome addition to cookie trays. You can keep the shortcut your secret. These brownie mix cookies start with simple ingredients.
- Box Brownie Mix, 17.8 ounce size – I used Betty Crocker Delights, but use your favorite.
- Large Eggs
- Vegetable oil – or other neutral oil
- All Purpose Flour
- White Chocolate Chips
- Milk Chocolate Chips – the box mix I used had chocolate chips, but I added a bit more, this is totally optional. If the brownie mix you use doesn’t have them, add the milk chocolate chips.

Tips for brownie cookie success
Start with a fudge brownie mix. Cake-like mixes make lighter cookies, while fudgy mixes give you the chewy, dense texture more like a brownie.
No hand or stand mixer is necessary; only a large bowl to mix the batter.
No need to chill the dough. It will be a bit on the wet side, but that’s OK. That’s the way it should be.
Use a medium or small cookie scoop to scoop the dough onto the cookie sheets.
Be sure to line your cookie sheets with parchment paper or a silicone baking mat.
Now this is important: Cool them on the baking pan for at least 5 minutes before moving them to a cooling rack. They will be fragile, and allowing them to set will keep them from breaking.
Add extra white chocolate chips on top before baking. Sometimes they get lost when the brownie cookies bake.

Ingredients
- 1 box 17.8 oz. Brownie mix, I used Betty Crocker Delights Supreme Triple Chunk
- 2 large Eggs
- ⅓ cup Vegetable Oil
- ½ cup Flour
- 1 cup White Chocolate Chips
- ½ cup Milk Chocolate Chips
Instructions
- Preheat the oven to 350℉. Line two baking sheets with parchment paper or silicone baking mats. Set aside.
- In a large mixing bowl, combine the brownie mix, eggs, vegetable oil, and flour with a wooden spoon or rubber spatula. Mix until well combined.1 box 17.8 oz. Brownie mix, I used Betty Crocker Delights Supreme Triple Chunk, 2 large Eggs, ⅓ cup Vegetable Oil, ½ cup Flour
- Gently mix in the milk chocolate and white chocolate chips until incorporated.1 cup White Chocolate Chips, ½ cup Milk Chocolate Chips
- Using a cookie scoop, portion the dough onto the cookie sheets, about 2 inches apart. I use a #40 cookie scoop.
- Bake for 10 to 12 minutes, until they look firm around the edges and are done in the middle. Don't overbake. They will look underdone in the middle.
- Remove from the oven and allow to cool on the baking sheet for about 5 minutes before transferring the cookies to a cooling rack to cool completely. Store in an airtight container.
