Chicken Cooking Tips
When I cook chicken breasts in a skillet, I pound them to an even thickness so they cook evenly and faster. I use the flat side of a meat mallet. Don’t pound them too thin, though.
Chicken should be cooked to an internal temperature of 165°F. Remove the chicken from the heat at about 160°F – 162°F, as it will continue to cook as it rests and as you serve it.
How do you store any leftovers from skillet chicken dinners?
Store leftovers in glass or plastic-covered containers in the refrigerator for up to 2 days. Reheat either in the skillet or oven. I don’t recommend using a microwave.
