Apples. The quintessential fall food, in my opinion. I’m so excited to be a part of #AppleWeek for the third year. To start the week off, I’m sharing warm apple topping made with Envy apples.
This is my second time working with Envy Apples and I’m happy to be doing so. The first time I made cinnamon apple turnovers with maple glaze. They are delicious and crisp with a hint of sweet. And juicy,oh so juicy. You have to love their tag line – “when you’re this good they call you Envy”. Don’t take my word for it, though, learn more about Envy and “bite and believe”.
Just after I received this amazing box of beautiful apples, I got an email ad from a local market and there, right before my eyes, was an ad for Envy apples. Although they hail from New Zealand, they can be found around the country.
So back to this delicious warm apple topping. It’s a recipe I found in my Mom’s collection about a year ago. The first time I made it, the family love it. So much so that when I co-chaired a cookbook project at school, my boys were insistent it be submitted. They are also delicious served as a side dish to ham or over ice cream, my Mom’s Southwest Georgia Pound Cake, waffles or pancakes. That’s how my family really loves to enjoy this topping.
Warm Apple Topping
Easy to make and delicious served over pancakes, waffles, ice cream, grilled pound cake or as a side dish.
- 1 tablespoon butter
- 2 large apples, peeled, cored and cut into 1/4-inch slices, I used Envy Apples
- 2 tablespoons packed light brown sugar
- 1 teaspoon apple pie spice
- 1/4 cup apple juice
In a large, non-stick skillet over medium heat, melt butter.
Add apples, brown sugar and apple pie spice. Cook over medium heat, stirring often, 3 -5 minutes, or until apples are tender.
Stir in apple juice and bring to a boil. Allow to boil one minute. Remove from heat and serve.
