One afternoon, while the kids were home on break from college, we were craving pizza. While these French bread pizzas are a family favorite, there was no French bread in the house. I did have just a few flour tortillas left, not really enough for my steak fajita recipe, so I threw together these tortilla pizzas.

Tortilla Pizza Topping Suggestions

  • When making this tortilla pizza recipe, make sure the toppings aren’t too heavy. By that, I mean the flour tortillas aren’t sturdy enough for toppings like meatballs, though some ground beef would work.
  • Use up leftover pulled pork or chicken for a barbecue tortilla pizza.
  • If you’re team pineapple and ham, diced ham with some chopped pineapple chunks would work on a tortilla.
  • For extra flavor, sprinkle freshly grated Parmesan cheese over the top before or after baking.

Tips for the best tortilla pizza

After making these pizzas a few times, I’ve learned some tricks.

  • The smaller flour tortillas work best for lunch or a snack. The larger tortillas are better if you’re serving these for dinner. You’ll need more ingredients if you’re using the bigger tortillas.
  • Do not overload the tortillas with the toppings. Too much moisture will keep the crust from getting crispy.
  • For an extra crispy crust, bake the tortilla for about 2 minutes before adding toppings.
  • Cut into wedges and serve like a traditional pizza.
  • Add fresh basil, spinach, or a drizzle of hot honey after baking for extra flavor.
  • Bake on a sheet pan or pizza stone for the best texture.
  • For the best cheese melt, use shredded mozzarella cheese. Shred it off a block of mozzarella for the best melting results.

What to serve with pizza tortillas

While the usual sodas are the obvious beverage choice, try Key limeade, strawberry iced tea, or blueberry lemonade are also good options.

What type of tortilla is best for tortilla pizza?

Flour tortillas work best because they become crispy while holding the toppings. Whole wheat or gluten-free can also be used.

How do you keep pizza tortillas from getting soggy?

Don’t use too much pizza sauce. A thin layer will keep them from getting soggy.

Do I have to use pizza sauce on pizza tortillas?

Pizza sauce has a lot of flavor, but you can use tomato sauce or marinara sauce. Just use a thin layer to keep them from getting soggy.
