I used semi-sweet chocolate chips, but you can use milk chocolate, dark chocolate, or mini chocolate chips. You might even try a combination of them. White chocolate chips would also work well too.

So many things go with chocolate chocolate chip pancakes! My family likes everything from bacon, sausage, and hash browns. The protein is always a given but a cup of fresh fruit balances the meal.
My kids like milk, but when it’s cold, I’ll serve my ultimate hot chocolate. My husband and I enjoy our regular coffee or a caramel coffee.

How do you top chocolate pancakes?
You can use maple syrup, caramel sauce, chocolate syrup for extra chocolate flavor, whipped cream, sprinkles, and/ or extra chocolate chips. Feel free to use your favorite toppings.

We rarely have any batter leftover but if you do, you can refrigerate the batter, covered, for up to 2 days.
Or you can make the pancakes and refrigerate them for up to 4 days, reheating them in a low oven or in the microwave.
You could also freeze the cooked pancakes between layers of parchment in an airtight container or freezer bag.

Why are my pancakes dry?
Overmixing the pancake batter can lead to dry pancakes. Combine the dry mixture and wet ingredients by hand until there are no streaks, but there will be lumps. Overcooking can also lead to dry pancakes. Flip as instructed in the directions and cook no more than about 2 minutes on the second side.

Instructions
- In a large bowl, combine the flour, sugar, cocoa powder, baking powder, and baking soda. Whisk the mixture to combine.1½ cups flour, ¼ cup sugar, ¼ cup cocoa powder, 1 teaspoon baking powder, ½ teaspoon baking soda
- In a medium bowl, combine the milk, eggs, and pure vanilla extract and whisk together to combine.1 cup milk, 2 large eggs, 1½ teaspoons pure vanilla extract
- Pour the milk mixture into the dry ingredients and stir until just combined. Add the cooled, melted butter and stir until combined.I prefer to sprinkle the chocolate chips in each pancake before flipping.
