Peppermint Cake Mix Christmas Cookies

These treats are a perfect marriage of convenience and festive flavor, making them a must-have for any cookie exchange or seasonal gathering.

Ingredients

  • 1 15.25 ounce White Cake Mix I used Duncan Hines
  • 2 large Eggs
  • ½ cup Vegetable Oil
  • 1 9.2 ounce Bag Holiday Mint M&Ms
  • ¼ cup Christmas Jimmies (Sprinkles)

Instructions

  • In the bowl of a stand mixer, combine the cake mix, eggs, and vegetable oil. Mix on medium until ingredients are well combined.
  • Using a rubber spatula stir in the mint M&Ms and the Christmas sprinkles until well distributed in the cookie dough. Chill the dough in the refrigerator for at least 1 hour and up to 2 hours.
  • Preheat the oven to 350℉. Line baking sheets with a silicone baking mat or parchment paper.
  • Using a cookie scoop, scoop dough and drop it onto prepared cookie sheets.
  • Bake for 10 to 12 minutes, until the edges begin to turn golden.
  • Remove from the oven and cool on the cookie sheet for 2 minutes before using a cookie spatula to move them to a wire cooling rack to cool completely.
