Rubber Spatula
- 1 15.25 ounce White Cake Mix I used Duncan Hines
- 2 large Eggs
- ½ cup Vegetable Oil
- 1 9.2 ounce Bag Holiday Mint M&Ms
- ¼ cup Christmas Jimmies (Sprinkles)
In the bowl of a stand mixer, combine the cake mix, eggs, and vegetable oil. Mix on medium until ingredients are well combined.
Using a rubber spatula stir in the mint M&Ms and the Christmas sprinkles until well distributed in the cookie dough. Chill the dough in the refrigerator for at least 1 hour and up to 2 hours.
Preheat the oven to 350℉. Line baking sheets with a silicone baking mat or parchment paper.
Using a cookie scoop, scoop dough and drop it onto prepared cookie sheets.
Bake for 10 to 12 minutes, until the edges begin to turn golden.
Remove from the oven and cool on the cookie sheet for 2 minutes before using a cookie spatula to move them to a wire cooling rack to cool completely.
