Mom's Gingerbread Loaf

A classic gingerbread loaf with warm spices and rich molasses flavor.

  • 2 cups flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon ground ginger
  • 1 stick unsalted butter
  • 1 cup boiling water
  • 1 large egg, beaten
  • ½ cup molasses

Instructions

  • Preheat oven to 350℉ and grease an 8½ x 4½ loaf pan and set aside.
  • In a large bowl, combine flour, sugar, baking soda, cinnamon, cloves, and ginger. Stir to combine.

  • In a separate bowl place the butter and add the boiling water, stirring to melt the butter. Add the butter mixture to the flour mixture and stir with a rubber spatula.

  • Add the egg and molasses and mix until well combined.

  • Pour the gingerbread mixture into the prepared loaf pan. Bake at 350℉ for one hour to one hour and fifteen minutes or until a toothpick inserted in the center comes out clean. Cool pan on a wire rack.
  • Cool the gingerbread loaf in the pan for 15 minutes. Run a butter knife around the edge and turn loaf onto a cooling rack to cool completely. Serve and enjoy.
