1/4poundmild Italian sausagecasing removed and broken into bits
1/2cupsweet oniondiced
1Envy appleshredded, moisture squeezed/ blotted out
2garlic cloves. minced
1/4cupshredded Cheddar cheeseplus more for topping
1sheet puff pastrythawed and cut into 2” by 2” squares

Instructions
Preheat oven to 350 degrees F.
Spray a mini muffin tin with non-stick cooking spray. Gently fit puff pastry squares into the muffin wells. You’ll need 18. Set aside.
In a skillet over medium heat, sauté onions, garlic, and sausage until sausage is browned, garlic is fragrant, and onions are translucent. Add shredded Envy apple. Stir constantly for 1 minute. Add shredded Cheddar cheese and stir until cheese becomes melty.
Spoon 1 tablespoon of mixture into each prepared puff pastry square. Top each bite with a bit more shredded Cheddar cheese.
Bake at 350 degrees F. for 20 - 25 minutes until pastry browns and cheese is melted.
