Parmesan Chicken Sandwiches

These Parmesan Chicken Sandwiches are a quick weeknight dinner or weekend lunch.

Ingredients

  • 1 cup all-purpose flour
  • 1 large egg lightly beaten
  • 1 ½ cups seasoned bread crumbs
  • 3 tablespoons grated Parmesan cheese
  • 4 boneless skinless chicken breast halves 5 ounces each
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 tablespoons vegetable oil
  • 4 hoagie rolls sliced
  • 4 slices provolone cheese or more if desired
  • 1 ⅓ cup marinara or other meatless pasta sauce warmed

Instructions

  • Place flour and egg in separate shallow bowls. In another bowl, toss bread crumbs with Parmesan cheese.
  • Pound chicken with a meat mallet to ½-in. thickness; sprinkle with salt and pepper. Dip chicken in flour to coat both sides; shake off excess. Dip in egg, then in crumb mixture.
  • In a large skillet, heat oil over medium heat. Add chicken; cook until golden brown and chicken is no longer pink, 4-5 minutes per side. Once done, remove the chicken to paper towels to drain. Preheat oven to 350℉.
  • Cut hoagie rolls in half and place the bottom half on a rimmed baking sheet.
  • Place one chicken breast on the bottom of each roll and top with warm marinara sauce and provolone cheese. Put the top roll on. Place the baking sheet in the preheated oven for about 10 minutes or until the cheese is melted. Serve
