Mardi Gras Cupcakes - Mini Version

Festive Mardi Gras Cupcakes in a mini version for the office, a class party or other celebration.

Ingredients

  • 1 package white cake mix regular size
  • 1 cup 8 ounces sour cream
  • 2/3 cup canola oil
  • 1/3 cup sugar
  • 4 large eggs
  • 1 can 16 ounces cream cheese frosting
  • Purple green and yellow decorator sprinkles

Instructions

  • In a large bowl, combine the cake mix, sour cream, oil, sugar and eggs; beat on low speed for 30 seconds. Beat on medium for 2 minutes. Fill paper-lined muffin cups with about a tablespoon of batter.
  • Bake at 350° for 10 - 12 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pans to wire racks to cool completely. Frost with cream cheese frosting. Decorate with colored sugars.

Notes

You can make 24 regular cupcakes. Just bake for about 18 - 20 minutes.
