Lemon Scones with Lavender Glaze

Ingredients

Scones

  • 2 cups flour
  • 3 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/ 2 teaspoon salt
  • 1/ 2 cup cold unsalted butter cubed
  • 2/ 3 cup milk
  • 2 teaspoons lemon paste or to taste
  • 1 large egg beaten with 1 tablespoon of water for egg wash

Glaze

  • 1 cup powdered sugar
  • 1/2 to 1 teaspoon lavender paste or to taste
  • Sea Glass Sprinkles from Sweets & Treats

Instructions

  • Preheat oven to 400°F.
  • Mix all the dry ingredients in a bowl. Add in cold butter and use a pastry cutter to incorporate into the flour. The pieces of butter should be about the size of a pea.
  • Add milk a little at a time and don't overmix. Stir in lavender and lemon and mix until just combined.
  • On a lightly floured surface, fold and turn the dough a few times. Roughly shape the dough into a 1.5-inch thick disk. Cut into triangles, like you would a pie, and place on a baking sheet. Bake for 15-20 minutes.
  • Remove scones from the oven and allow them to cool slightly before drizzling with lemon glaze.
  • Make the Lavender Glaze
  • In a small bowl, whisk together powdered sugar, lavender paste, and 1 - 2 tablespoons of water. Drizzle over cooled scones, sprinkle with Sea Glass sprinkles, and serve.
