In a medium saucepan over medium heat combine the honey and dried chili pepper flakes.
Heat the honey mixture to just about boiling, but do not boil, stirring frequently so it doesn't burn.
Stir over heat for 10 minutes, then remove from heat to cool completely. Taste for spiciness. If you're happy with the heat, strain the chili flakes and store in a glass container.
If you prefer more heat, store in a glass jar with the chili flakes. Stir and taste after a few days. Once you reach the heat level you desire, strain the chili flakes and store the hot honey.
