Frosted Eggnog Cookie Bars

There is nothing more holiday than eggnog. Frosted eggnog cookie bars have a hint of eggnog making them perfect for the holiday season.

Ingredients

For the Bars:

  • 1/2 cup butter softened
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 1 egg
  • 1/4 cup eggnog I used non-alcoholic
  • 1 teaspoon vanilla extract I used Adams Extracts
  • 3 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly grated nutmeg

For the Frosting:

  • 1/2 cup butter softened
  • 1/2 teaspoon vanilla extract I used Adams Extracts
  • 1/4 cup eggnog I used non-alcoholic
  • 1/4 teaspoon salt
  • 3 1/2 cups powdered sugar
  • Snow Storm sprinkles from Sweets & Treats

Instructions

  • Preheat oven to 375 degrees. Spray a 9 x 13-inch pan with nonstick baking spray.
  • Beat the butter and sugars until creamy. Add the egg, eggnog, and vanilla extract and beat until combined.
  • Combine the flour, baking powder, salt, and nutmeg. Slowly add it to the butter mixture until everything is mixed in.
  • Press it into the prepared pan. Bake for 15 minutes. Do not over bake. Let cool completely.
  • Beat the butter until creamy. Add the vanilla extract, eggnog, and salt and beat again.
  • Slowly add the powdered sugar until everything is creamy. Spread evenly over the cooled bars. Top with sprinkles. Gently press sprinkles into the frosting.
