If you’re kids have started school, I hope it’s off to a good start. If you’re still enjoying your summer, lucky you! One, you’re still enjoying your family and having some fun, hopefully. Two, you have extra time for lunch box planning. Welcome to Week 3.
Of course we pack sandwiches, snacks salads and more for a child’s lunch. This week I’m adding something new. A fun beverage, strawberry lemonade, from my site. I would always pack a bottle of water for hydration but I often would include an alternative beverage too. I just recently made this version of my traditional lemonade for a #FarmersMarketWeek I participated in with some fellow bloggers. It was a total hit with the kids.
A sweet treat that includes a bit of healthy comes from A Palatable Pastime. Apple slices with honey peanut mascarpone dip are a delicious pick me up snack. What I love about this dip is that it’s light and not fully heavy like plain peanut butter. You could either buy those packs of apple so they don’t brown or slice an apple and toss the slices with apple juice so they stay nice. That’s a trick I learned a few years ago. That way they don’t taste like lemon juice.
If there is something I’ve learned in the many years I’ve made lunches for my kids it’s that they love foods they can build themselves, so to speak. These lunch box walking tacos from Soulfully Made are super fun! You could cook up the ground beef, or turkey, and freeze some of it for future weeks making planning even easier. Include your child’s favorite taco toppings and mix things up between using Fritos, Doritos and tortilla chips. When I told my boys about these walking tacos they even suggested Bugles.
Ham and cheese rolls with honey mustard dipping sauce from Cooking with Carlee is another delicious, and fun, lunch. Kids love foods they can dip. The honey mustard sauce is also homemade but if you’re pressed for time, you could certainly use a prepared one. To mix it up you could substitute turkey or roast beef with any sort of cheese that your child likes.
Continuing with the fun food theme, this weeks cookie comes from Tip Garden. Dinosaur chow are no-bake cookies so you can pull them together quickly. These are easy enough for kids to help make for the week. Older kids may even be able to make them by themselves.
