Roasted Garlic and Chicken White Pizza

Those of you who like California Pizza Kitchen may recognize this pizza. My Roasted Garlic and Chicken White Pizza is a take-off of their roasted garlic chicken pizza. My version is just like I remember it from all those years ago when I first had it.

Have you ever had a meal in a restaurant that left you with a vivid memory? The very first time I went to California Pizza Kitchen was with my Mom and we tried the roasted garlic chicken pizza. I never forgot the flavor.

I would say that was at least 20 years ago and I finally got around to making a take on it for my family. My version is better than I remember and my family loved it too.

Some people are turned off by the thought of a white pizza. My husband was one of those people… until he tried this roasted garlic and chicken white pizza.

Have you ever tried white pizza? The first white pizza I ever had was a broccoli white pizza. It was surprisingly good, again, flavors I’ve never forgotten.

How do you roast garlic?

Once you roast some garlic, you will be hooked because it’s one of the easiest things you will ever do.

First, take a whole garlic bulb and remove any loose skin. Cut off a small slice from the top of the blub. Place the whole bulb on a piece of aluminum foil, drizzle with good olive oil and sprinkle with some salt and pepper.

Loosely wrap the foil around the garlic and place in an oven-safe dish. I usually use a glass pie plate. Bake in a preheated oven 400° F oven for 30 to 40 minutes. The garlic will be fragrant.

Remove from the oven and cool completely. Once the garlic is cool enough to handle, squeeze the cloves from the paper skin into a bowl. You may have to use a butter knife to coax some of the cloves out. Set aside until ready to use.

I made the pizza in a rustic sort of way but the dough is so workable you could easily form it into a pizza pan or sheet pan. The rustic way produced a more rectangle slice rather than the traditional triangle.

I think what really puts this pizza over the top is the caramelized onions. The mild sweetness of the onions balances with the bolder flavor from the roasted garlic.

The pizza dough recipe I’ve included is super easy, though it does need to rest and rise for about 30 minutes. A time saver would be to purchase pizza dough. Often your favorite pizza shop will sell you the dough or sometimes you can find it in your supermarket deli area.

Much of this pizza can be prepared in advance. Cook and shred the chicken in advance, make the roasted garlic ahead, and store both in the refrigerator.

Ingredients

  • 2 ½ to 3 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 package quick active dry yeast 2 ¼ teaspoons
  • 3 tablespoons vegetable oil
  • 1 cup very warm water 120° to 130°

Instructions

  • Mix 1 cup of the flour, the sugar, salt and yeast in large bowl. Add 3 tablespoons oil and the warm water. Beat with electric mixer on medium speed 3 minutes, scraping bowl frequently.
  • Stir in enough remaining flour until dough is soft and leaves sides of bowl.
  • Place dough on a lightly floured surface. Knead for 5 to 8 minutes or until dough is smooth and springy. Cover loosely with plastic wrap and let rest for 30 minutes before using.

Ingredients

ROASTED GARLIC

  • 1 garlic bulb
  • Olive oil
  • Salt and pepper

CARAMELIZED ONIONS

  • 1 large onion thinly sliced
  • 1 tablespoon butter

ROASTED GARLIC WHITE SAUCE

  • 1 tablespoon butter
  • 2 tablespoons flour
  • ½ cup milk
  • ¼ cup half and half
  • Roasted garlic mashed
  • ½ teaspoon black pepper
  • ¼ cup Parmesan cheese

Pizza

  • 1 recipe pizza dough or store bought
  • Roasted garlic white sauce
  • 2 cups shredded cooked, chicken breast
  • Caramelized onions
  • 1 cup Mozzarella cheese shredded
  • Cornmeal for baking sheet

Instructions

  • Roast the Garlic: Preheat oven to 400 degrees F. Cut the top off of garlic bulb and place on a sheet of aluminum foil. Drizzle with olive oil and sprinkle with salt and pepper. Bake for 30 – 40 minutes until fragrant and soft. Cool and squeeze cloves from garlic skin. Reserve into a bowl until ready to use.
  • Caramelize the onions: In a medium skillet melt butter. Add onion and caramelize over medium-low heat until golden in color. Do not rush this process.
  • Make the white sauce: In a saucepan melt butter. Add flour and stir continuously until the mixture becomes light brown. Slowly whisk in milk and the half and half then adding mashed roasted garlic and pepper. Stir but do not boil.
  • Add Parmesan cheese and stir, combining well.
  • When ready to make the pizza: Preheat oven to 450 degrees F.
  • Roll out the pizza dough to ¼ – ½-inch thickness. (This will create a thicker crust). Transfer to a baking sheet sprinkled with cornmeal.
  • Add white sauce and spread to within ½ – 1-inch of crust edge.
  • Add cooked, shredded chicken and caramelized onions on top of sauce.
  • Evenly sprinkle shredded mozzarella cheese over top of the pizza.
  • Bake in a preheated oven for 20 to 25 minutes or until the crust is golden. This could be more or less depending on how thick you roll your crust.
  • Slice the pizza and serve.
