This mango, melon and berry parfaits start the day in the right way. Full of flavor and good for you. A great mid-day snack too.

Nothing is easier together for a brunch than a parfait. These parfaits came together quickly and easily. Yogurt, granola, fresh blueberries and cantaloupe. Oh and a not so typical ingredient, Torani mango syrup.
Since I was running out of time I picked up my son’s favorite granola from our local market. Next time I will make almond pecan granola to use.
I had some plain Greek yogurt in the fridge that I bought by mistake. I meant to buy vanilla. So I thought, why not mix some Torani mango syrup into the plain yogurt. That proved to be a brilliant idea. My son was not a fan of the plain but when I added the mango, he loved it. Blueberries and melon are great compliments. The granola adds some texture.
Greek yogurt is the best choice to mix in the mango syrup. Sometimes when you stir regular yogurt, it thins out. Greek has a thicker texture and can stand a bit of stirring. Stir gently though. It will hold up better when you build the parfait. I used my Afina JoyJolt glasses to build the parfaits.
