Ingredients for cake mix cookie bars

Yes, these funfetti cookie bars start with a cake mix but that can be our dirty little secret.

  • Yellow Cake Mix – use your favorite brand.
  • Egg – you’ll need the large vareity.
  • Milk – whole or 2% works best.
  • Vegetable Oil – not olive oil, use a salad, or neutral, oil
  • White Chocolate Chips – you could use chocolate chips to mix things up.
  • Rainbow Sprinkles – Any color will do but you need the jimmies or long sprinkles. You don’t want to use nonpareils.

Before making this recipe make sure you have the correct size pan. You need a 15 x 10 x 1 jelly roll pan.

These funfetti cookie bars are made in a jelly roll pan, also known as a rimmed baking sheet. You may also know it as a cookie sheet with sides.

After my kids went back to school, I wanted to make a new treat for them when they came home “starving”. I was looking for really easy and also did not want to go to the store for any ingredients. I know, a tough bill to fill.

So, I took to my copy of the Simple & Delicious Cookbook. This recipe spoke to me…easy, cake mix, white chocolate chips, jimmies (or sprinkles). Lo and behold, I had all of the ingredients so I set off to make it.

Change up the jimmies (you may call them sprinkles), using red, green, and white for Christmas or pastels for spring.

Tips and Tricks to Making Funfetti Cookie Bars

  • Using a yellow cake mix makes this recipe more flavorful. You could choose to use a butter yellow cake mix but I don’t suggest a white cake mix. White cake mixes are softer when made. Yellow has more substance which you need with the addition of the white chocolate chips and jimmies, also known as sprinkles.
  • Make sure all ingredients are at room temperature.
  • It’s OK to use whole or 2% milk. I have used both of these when I’ve made this recipe. I have not tried this recipe with non-dairy milk products.
  • You may also know these treats as funfetti cake bars due to the addition of the sprinkles. These cake bars travel well making them perfect for a potluck party.

Funfetti Cookie Bars

Ingredients

  • 1 yellow cake mix I used Duncan Hines
  • 1 large egg
  • 1/2 cup 2% milk
  • 1/3 cup canola oil
  • 1 cup white baking chips
  • 1/2 cup mulit-color jimmies sprinkles

Instructions

  • Preheat oven to 350 degrees F. In a large bowl, combine the yellow cake mix, egg, milk and oil. Stir in white baking chips and jimmies. Spread into a greased 15x10x1 – inch baking sheet.
  • Bake 18 – 20 minutes or until a toothpick inserted in the center comes our clean. Cool completely in pan on a wire rack. Cut into bars.
  • To freeze the bars: Freeze in freezer containers. Thaw in covered containers before serving.

The number of bars you get will depend on the size you cut them.
