The blogger community is many things but most of all supportive. When my friend Katie over at Bug & Bear Eats asked if anyone would consider guest posting during her maternity leave I jumped at the chance. First, I know what it’s like to worry about your blog when you can’t give it regular attention. That happened to me when my family had to evacuate for Hurricane Irma last year. Since Katie is taking maternity leave, I thought a family friendly recipe she can make in years to come was in order. Chocolate chip cookie bars make a great lunchbox or after-school treat. Kids of all ages will love them. They are a bit crispy on the outside but soft on the inside.
While corresponding with Katie about post ideas, we discovered that we live about 2 hours away from each other. It’s always fun to learn of bloggers that live close-by. I’ve had to opportunity to meet up with a few. I hope that sometime Katie and I can catch up too so I can see her beautiful baby in person. Until then, I’ll adore her photos and watch her grow.
These chocolate chip cookie bars also make a delicious base to an ice cream sundae. Add your flavor to a slice along with favorite toppings such as nuts, coconut, caramel sauce and hot fudge sauce for an over the top dessert. If you’re looking for other easy bar type recipes try my Lemon Oreo Bars, Cream Cheese Swirl Brownies or Chocolate Chip Brownies. So head on over to Bear & Bug Eats for the recipe.
