Mermaid swirl whipped cream is a fun addition to cupcakes or an ice cream cake.

Never in a million years did I ever think I would make something with the title mermaid, let alone mermaid whipped cream. I have boys, who are now teenagers.

There are no little girls in the family, nor any neighbors who have little girls. Many of my good friends are Moms of boys so for me to make something “mermaid” is a bit of a stretch.

But I recently included mermaid whipped cream in a post for a blogger event, individual mermaid ice cream treats, and it got such an overwhelming response I thought I’d give it a post of its own.

First make the whipped cream. The trick to whipping cream is to use a chilled bowl and chilled beater. Make sure your heavy cream is cold too. It will whip better. Start the mixer slowly and gradually increase the speed. Don’t over whip or you will wind up with butter. Use confectioners’ sugar to sweeten the cream. Granulated sugar will make it grainy. Add the gel food coloring as you begin to whip the cream.

You’re probably wondering how you make that awesome swirl effect. It’s a lot easier than you think. You will need 3 disposable piping bags. Put each whipped cream color in its own bag, clip the end, then put both into another bag fitted with the 1M star tip. You are now ready to pipe two-tone whipped cream.

There are so many ways you can use this mermaid whipped cream. You can use them the way I did in the ice cream treats and top ice cream, top an ice cream cake, use it on milkshakes or hot chocolate. Use pink and purple with sprinkles and you have unicorn swirled whipped cream.

Ingredients

  • 1 cup heavy cream divided
  • 3/4 cup confectioners' sugar
  • Pink and blue food coloring or other colors you prefer

Instructions

  • In a chilled bowl using a chilled beaters, whip 1/2 cup heavy cream with 6 tablespoons Dixie Crystal confectioners' sugar to stiff peaks, adding blue food coloring, just a drop or two for desired color, after a few seconds. Refrigerate after you achieve stiff peaks.
  • Repeat with remaining 1/2 heavy cream and sugar, using pink food coloring. Refrigerate until ready to use.
  • Using Wilton disposable decorating bags, put each color in a separate bag. Clip a small portion off the end of each bag. Place those two bags into another disposable bag fitted with the Wilton 1M star tip. Making sure you have the ends of all three bags twisted, carefully pipe the whipped cream onto the ice cream cups. You will achieve the swirl easily.

  2. Whipped cream is often used in European cakes and not nearly so much here in the USA. But I love how delicious and rich it tastes while being lighter than other rich tasting cakes. Nice recipe for decorating cakes.
