Sometimes, during the hustle and bustle for the holidays, things fall by the wayside. Evenings spent shopping and wrapping presents means dinner is quick and dessert is often absent.  It doesn’t just have to be the holidays for life to get busy and these molten lava browines are perfect when life is chaotic.

If you’re on social media, you’ve probably seen Tasty videos. Their recipes are some of the easiest I’ve seen. The new Tasty Ultimate Cookbook is full of easy recipes, including these molten lava brownies. If you can make brownies from a box, you can make this recipe. Your friends and family will think you’ve taken a cooking class!

They are really that impressive! A delicious, mouthwatering brownie, but when you plunge your spoon, yes you need a spoon, into the center you’re rewarded with a warm, melty, gooey chocolate center.

I have to say I was excited at the opportunity to review this new cookbook. I find the Tasty video ideas to be clever. Their recipes have a wide appeal, in more ways than one. First, they are relatively easy. In addition to these molten lava brownies, the 3-minute mug omelet, baked BBQ chicken drumsticks, and chili dog skillet, among others, are suitable for any skill level. There is also a great variety of recipes. Everything from main dishes, appetizers, sides and desserts. Truly something for everyone.

In the cookbook, this recipe makes 2 servings. It says to discard or bake separately part of the brownie batter. Since there are 4 of us, I decided to make 4 and there was certainly enough batter to do so.  For the truffles, I used Lindt milk chocolate. It’s what we like but dark chocolate would be fine to use too.

The serving suggestion in the cookbook has berries and whipped cream. Certainly a classic way to garnish this dessert. I chose a more simpler route and just added a dusting of powdered sugar. My oldest wanted ice cream and chose cookies and cream. He was pleased with his choice and next time I may go with a scoop of vanilla ice cream.

It’s fun to write cookbook reviews again and I have a few more coming up as well. Another favorite recipe from a cookbook is magic coconut bars. This Tasty Ultimate cookbook would make a great holiday or wedding shower gift for your favorite cook or foodie. The recipes are simple enough making it a perfect graduation gift too.

Molten Lava Brownies

An easy, yet impressive dessert.

Ingredients

  • 1 box brownie mix
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 8 milk or dark chocolate truffles unwrapped (I used Lindt)
  • Mixed fresh berries vanilla ice cream, and chocolate sauce
  • or for a simple presentation, confectioners' sugar for dusting for serving (optional)

Instructions

  • Preheat oven to 350 degrees F. Grease four 6-ounce ramekins or cocottes with cooking spray. Place prepared dishes on a rimmed baking sheet. Set aside.
  • Prepare the brownie mix according to the package instructions, using the vegetable oil, eggs and 1/4 cup of water. 
  • Spoon 1/2 cup of the brownie batter in each ramekin, then press 2 chocolate truffles side by side into the center of each. Spoon 1/4 cup of the remaining brownie batter over the top of the truffles in each ramekin and smooth the tops with the back of the spoon.
  • Bake the brownie cakes until the batter is set and dry on top, about 25 minutes. Transfer the ramekins to a wire rack and let the cakes cool slightly, about 5 minutes.
  • Top the cakes with fresh berries and serve warm with ice cream and drizzled with chocolate sauce. Or simply sift confectioners' sugar over top and serve.
The warm and gooey center in these molten lava brownies is instant bliss.

    I love lava cakes that have melted chocolate in the middle. I’ve never actually tried to make them though. These look delish and sound pretty easy to make. On my to-do list!

    These molten lava brownies look so delicious and easy! I’ve never made them myself before but looking at your recipe makes me want to!! And so I will.

    This is utterly indulgent! Would be perfect for Christmas dessert with a scoop of vanilla — you don’t even need the hot fudge thanks to those truffles nestled inside.
