Mango Bellini's for afternoon sipping.Remember a few weeks ago when I wrote about my wonderful neighbor who gave me fresh mangoes? I ended up making frozen mango margaritas for this summer cocktail series. Well, this week I’m back with a Mango Bellini using fresh mango puree from the bounty I was given.

We love Bellini’s and I often make them for a special Sunday occasion like Mother’s Day, Father’s Day or Easter. For as much as we enjoy a Bellini, I’ve never included one on the blog so this summer cocktail series was the perfect opportunity as was my gift of mangoes.

A bit about the champagne flute. You may see around the bottom of the stem that engraved in them is 2000. The actual stem is also a zero. A pair of these limited edition flutes were given to us by my Mom to commemorate the millennium.

If you aren’t sure how to make fresh mango puree, see my frozen mango margarita post link above. This can be made with any sparkling wine you like. Cava from Spain, Prosecco from Italy (my personal favorite), sparkling wine or Champagne will all work.

Mango Bellini

Celebrate any special occasion with a mango bellini

Ingredients

  • 8 tablespoons fresh mango puree chilled
  • Sparkling wine Prosecco, Cava or Champagne, chilled
  • 4 fluted champagne glasses

Instructions

For each Bellini:

  • In each fluted champagne glass add 2 tablespoons of the mango puree. Fill with sparkling wine. Gently stir to combine puree and champagne.
  • Serve.

A mango bellini is the perfect way to celebrate any summer occasion.
