Grasshopper brownie recipe is perfect to take to a summer cookout or potluck.

Today I’m sharing a new to me recipe that would be great for a cookout, backyard gathering, or potluck. Grasshopper brownies is a recipe given to me by my dear friend Kristy. Our kids go to the same school and we volunteer together. I made these for a meeting we both attended and they were a hit.

Grasshopper brownies start with a mix for convenience and ease.

When I thought about including this recipe, I asked her permission to share it. I have a few brownie recipes on the site already, like chocolate chip brownies and fudge frosted brownies, but you know there’s always a place for recipes that start with a mix. Especially when you have unexpected company, a last minute invitation, or your kids forget to tell you about tomorrow’s bake sale. I consider this a semi-homemade dish since the cream cheese frosting is made from scratch.

I’ve made these grasshopper brownies a couple of times since Kristy gave them to me. They have won rave reviews each time, from kids and adults. If you like a more peppermint flavor, up the extract to 1/2 a teaspoon. Any more would be overpowering. The best thing about this recipe is that I usually always have the ingredients on hand.

Ingredients

  • Brownie Mix including ingredients to make them, prepare as directed on package

Topping:

  • 4 cup powdered sugar
  • 3 ounces cream cheese softened
  • 1/4 cup butter softened
  • 3 tablespoons milk
  • 1 teaspoon vanilla
  • 1/4 teaspoon peppermint extract
  • 4-6 drops green food coloring

Instructions

  • Prepare brownies as directed on package for 9 x 13-inch pan.
  • Cool completely.
  • In large bowl, combine all filling ingredients and beat at medium speed until smooth. Spread over cooled brownies.
