Today is National Strawberry Day and how absolutely perfect that it falls during Florida’s winter strawberry season, which runs from December to April, according to the Florida Strawberry Growers Association. A great way to start your day is with a smoothie made with vanilla yogurt and fresh Florida strawberries. Easy to whip up in your blender any day of the week. Packed with vitamins, including vitamin C, folate, iodine, and dietary fiber the strawberries combined with the protein of the milk and vanilla yogurt make this smoothie a good choice for a mid-morning snack or to accompany breakfast or lunch. No need for extra sugar in this recipe. The sweetness of the strawberries and the sugar already in the yogurt combine for the perfect taste. IF the strawberries are on the tart side, before serving, taste the mixture and add a small amount of powdered sugar at a time, to taste. It will combine better and there’s no potential for a grainy smoothie. Remember, you can always add more sugar but you can’t take any away.
- 1 cup fresh Florida strawberries, washed, dried and sliced
- 1/2 cup vanilla yogurt
- 1/4 cup cold milk
- 1/4 cup ice cubes
- Whole strawberry for garnish, washed and dried
- In a blender, combine sliced strawberries, vanilla yogurt, ice and milk. Blend until smooth.
- Pour smoothie mixture into fancy glass. Carefully create a slit in the bottom of the whole strawberry and slide onto side of glass.
- Serve immediately
Do you usually end a dinner party with dessert and coffee? If you answered yes, you probably put a lot of thought into the dessert you will serve but just make a pot of black coffee to serve with cream and sugar. Nice, but boring. Take your coffee, and your party, to the next level with caramel coffee. It couldn’t be easier to make for entertaining. The creamy caramel melted into brewed black coffee is delicious and goes with just about anything dessert. Is there a more natural combination than the caramel coffee served with an apple crisp or pie? Chocolate cake and caramel coffee works too.
Want to mix it up? Use hazelnut flavored coffee and you have hazelnut caramel coffee. The caramel paired with other coffee flavors like pumpkin, French vanilla, chocolate or cinnamon are also yummy combinations. You can adjust this recipe for more or less servings by simply increasing or decreasing the caramel and the number of cups. Your guests will be so impressed.
- 8 teaspoons Hershey's Caramel Topping, divided
- Black coffee, brewed
- Reddi Whip
- In the bottom of each of 4 coffee mugs, pour 2 teaspoons of Hershey's Caramel topping. Pour hot, black coffee into each mug. Stir to melt caramel and combine. Top with Reddi Whip topping and drizzle with additional caramel topping. Serve immediately.

In one of the groups I’m in on Facebook there was a Taste of Home challenge posted. The challenge was to grab the ad from your favorite supermarket and choose an item from the first or last page then make a recipe from the Taste of Home website and post it there. Since the last page of my ad was basically hurricane supplies, my choices were limited. On the front page were pork tenderloin, cranberry juice, Triscuit, a wing deli tray, shrimp and pre-packaged salad. I’ve been looking for a refreshing, non-alcoholic beverage for my son’s upcoming summer birthday party, I chose to go with the cranberry juice. Am I glad I did. This recipe is sure to be a crowd pleaser. It’s not too sweet and doesn’t have the bite of the carbonation that comes with Sprite (the lemon-lime soda I used). The best part is it will be easy to adjust the ingredients for a larger crowd. You could also make this a grown-up libation by adding vodka or rum, or my favorite, spiced rum. I did not chill the juices prior to making this and it was fine just poured over ice. I usually purchase the six-pack of Ocean Spray cranberry juice and those are just over a cup so I used the whole bottle since there wasn’t much left.
So, week 14 of the 52 Week New Recipe Challenge is this cranberry spritzer recipe, the non-alcoholic version. To save the calories from the lemon-lime soda, you could certainly substitute a carbonated water such as Perrier, although the taste will be very different.
Non-alcoholic Cranberry Spritzer
1 cup cranberry juice, chilled
1/2 cup unsweetened pineapple juice, chilled
1/4 cup orange juice, chilled
1 can lemon-lime soda (such as Sprite), chilled
In a pitcher combine all ingredients except ice cubes. Gently stir the to combine. Place ice cubes in two glasses and fill with spritzer mixture.
Makes 2 servings.
