Nutty Triple Chocolate Cookies

Well, in the middle of making cookies for the 12 Days of Christmas cookies I managed to hurt my back. So, some of the cookies had to change, but that’s OK. It’s good to be flexible. So to the cupboard I went in search of another cake mix to make these nutty triple chocolate cookies. You do what you have to do when you’re in pain. The best part was I did get my boys in the kitchen to help and that always makes me happy. As they get older (much to fast by the way) we have so much fun. I basically supervised and just look how beautiful the cookies turned out.

I used pecan in this recipe but you could use walnuts. When we were heading home from vacation last year, we stopped for pecans in Georgia. I bought whole, chopped and finely chopped pecans. I used the finely chopped ones for this recipe and I think they worked well. Every bite is chocolaty goodness. Even with all that chocolate I didn’t feel they were too sweet. These are perfect for holiday giving or lunch boxes throughout the year.

Ingredients

  • 1 package devil’s food cake mix
  • ½ cup butter melted
  • 1 large egg
  • ½ cup semi-sweet chocolate chips
  • ½ cup milk chocolate chips
  • ½ cup white chocolate chips
  • ½ cup chopped pecans

Instructions

  • Preheat oven to 350°F.
  • Combine cake mix, melted butter and egg in large bowl. Beat at low speed with electric mixer until blended. Stir in all chips and pecans. Drop by rounded tablespoonfuls on ungreased baking sheets.
  • Bake at 350°F 8 to 10 minutes. Cool 1 minute on baking sheet. Remove to cooling racks and cool completely.

  2. These cookies look wonderful. Well done to your boys. Pecans aren’t so easy to find here in Italy but your story about buying them in Georgia reminded me of the hazelnuts I bought recently in the Piedmont. I also bought whole, chopped and finely chopped. I guess I could use them in this recipe instead of the pecans.
