Ingredients

With just four simple ingredients this strawberry sauce is ready in no time.

  • Fresh Strawberries – you can also use frozen.
  • Sugar
  • Cornstarch
  • Water

Equipment

Sliced strawberries in a pan.

How do you make strawberry sauce?

This easy recipe takes just about 15 minutes to cook, once you prep the strawberries.

Combine the sugar and fresh berries (or frozen, if using those) in a medium saucepan over medium heat.

Allow the strawberries to release their juice and stir with a rubber spatula to melt the sugar.

First, a word about the sugar: I used the least amount of sugar to begin, tasted the mixture after mashing the berries, and added a bit more. Remember you can always add more but you can’t take away!

You must make a cornstarch slurry to thicken the sauce. The instructions are with the recipe.

Using the pastry cutter, that’s the easiest way I’ve found to break up the larger chunks of strawberries. Do this once the mixture boils and the strawberries have softened. My family likes strawberry chunks in this sauce. If yours does not, break them down more or strain the sauce and make a strawberry coulis.

How can I use strawberry sauce?

There are many ways you can use this great recipe. Here are some of my favorite ways to showcase the simple berry sauce.

  • Use it as a strawberry topping for ice cream sundaes or dress up a simple bowl of vanilla ice cream or strawberry ice cream.
  • Cover the top of a plain cheesecake to create an instant strawberry cheesecake.
  • Spoon over pound cake or angel food cake and top with whipped cream.
  • Use it as a sauce over waffles, french toast, or pancakes.
  • It’s the perfect topping for strawberry shortcake too!

How can I store homemade strawberry compote?

Cool the sauce to room temperature before storing. You should be able to put your hand on the pot, it should not be hot to the touch.

Because the strawberry sauce is red I don’t recommend storing it in plastic because it may discolor your plastic containers.

My recommendation is to store the sauce in an airtight container made of glass. A clean mason jar with a lid works well.

This strawberry sauce can be kept for 7 days in the refrigerator. To keep it longer, use a freezer-safe container and store it for up to 3 months. When ready to use just thaw and enjoy.

Handy tip: How to Buy Strawberries

When buying fresh strawberries at the grocery store look for berries that are deep red, shiny, and soft, not dry, leaves.

Tips and Suggestions

If you want a smooth sauce press the mixture through a fine mesh strainer with a wooden spoon or rubber spatula.

Some fresh fruit sauces add a squeeze of lemon juice. Add a teaspoon if you want but it’s not necessary.

If you’ve enjoyed my homemade strawberry sauce recipe, try my blueberry sauce. It’s another easy sauce to make.

The best part of this simple strawberry sauce are the readily available basic ingredients and fresh strawberry flavor. November to March is fresh strawberry season in Florida. I usually go to a U-Pick strawberry field and stock up, freezing what I don’t use right away.
